You've answered yourself ;) Forget NOS. Parts car, or a custom built one would be the way to go.
Either way, in a stock car that hasn't been messed with by an inventive owner, it's extremely unlikely you would ever need a replacement harness. Unlike the 1992 - 1994 W124 junk, which disintegrated after a few years, the W116 wiring harness is rock solid. Both the one on my 450, and the one I've pulled from the 350 were in great shape. Most connectors / sockets and the internal pins / receptacles are available from MB still, and cheap, as they were all used across dozens of models.

Your old harness for the most part will be good.  The branches in the engine bay there are probably some that are deteriorated from the heat up there. These can easily be rebuilt.  Remove the connectors, desolder the pins, remove the sheathing and cut back all the old wires near the firewall in an offset manner so that when you put together there wont be a bulge in one spot.

Use matching color wire from an old harness ( I may have some available) recrimp using un-insulated connectors and use shrink tubing on the joints. Then slip on new sheathing on each branch and solder the pins on and replace the connectors as needed. The bosch boots and connectors can be purchased new. 1287013003 Bosch.  All the crimps need special dies to crimp correctly.
