Title: Oversized rims

I can't find decent tires in 14" or 15" so I'm thinking of going to 16". The only rims I can find with the correct offset are  the Borbet Classics A.

7.5X16 rims with more offset are more plentiful.  Anyone running more offset than 20 mm on 7.5" width?  I'm thinking the car would look better with a wider track, but would for example 30 mm offset rub the fenders?

Have you looked at Dunlop Sport BluResponse?
They come in 215/65R15 and are a really good tire.

NLA in the USA I think

Kuhmo Platinum was the last 15" I could find and those are NLA.  Great tire, though.

What model 116 are you driving?  I upgraded from stock 14" bundts to 15" Michelin Defenders, 205/65R.  They've been great in my opinion, and seem to handle all kinds of speeds in all kinds of Pacific NW weather.

I've got a 6.9 and there are tires that fit the rims, but the speed ratings are low and they don't have enough grip.  I drive this thing like it was designed to be driven.  When I go up to 16", I'll run Michelin Pilot AWS or similar.  I have those on another car and they stick.
